Scotland’s rolling hills and glens offer a unique natural environment for a wide variety of flowers and blossom plants. Scottish Blossom honey is from the first part of the season. You can find which plants our bees foraged on this season in our pollen analysis.
You might notice the newest batch of blossom honey has separated in the jar. Nothing to be concerned about, honey is a complex natural product so every batch will be slightly different. In this case, it's because the honey was harvested and bottled in the abnormally high temperatures of the late summer. Just give it a stir and enjoy.
We don't use the term raw honey for this product as the term 'raw honey' is not permitted by Trading Standards. However, we feel this is what some people mean when they ask if it's 'raw honey': pure honey, taken from the hive and gently warmed so it can be manually filtered (but never above the temperature of the hive and never pasteurised). After filtering it is processed in an organic processing facility and jarred to perfection.
